Chocolate glazed toasted coconut doughnuts + a giveaway

Chocolate glazed toasted coconut doughnuts

There’s a Voodoo Doughnut shop two blocks away from our place. I run by there at least five times a week. At 6AM when there isn’t a line (!) and the sun isn’t up to reflect off the glass and impede my ability to see trays upon trays of delicious palm oil-laden sugar bombs. Somehow I keep running, even though I want to stop. Even though I haven’t eaten breakfast and the thought of getting a yeasted doughnut and devouring it in the alley sounds so much better than hurrying through the convoluted city route I’ve got mapped out in my head.

I’ve started this thing where, at least once a week, I indulge myself after the concrete loop. I deserve it! I say. And so I walk in, completely out of breath, trying to figure out which pocket swallowed my cash (why do running tights have so many pockets?) (and why does Voodoo only accept cash?) and while I’m digging I order two doughnuts: one coated in cinnamon sugar and one topped with chocolate frosting. I usually get a little over halfway into each before tossing them back in the bag because not only does the overly processed sugar give me some serious jitters, I swear it penetrates my teeth in a way that can’t be brushed or swished away.

So this is where I tell you that eating doughnuts isn’t exactly the best thing to ingest after a 12 hour fast (or however long you go between eating dinner a post-dinner snack and first breakfast). Are doughnuts delicious? Absolutely. Nutritious? Not in the slightest. But thankfully I’ve kinda-sorta fixed that with a baked doughnut recipe that won’t leave us feeling like we just ate 10 pixie sticks or like we need to pay a visit to that person who examines oral cavities for a living.

You’re probably wondering about the + GIVEAWAY thing up top so let’s get to it. Just over three years ago I started this blog and I somehow missed what some would call a ‘blogiversary‘. To show you how much I appreciate your kindness and constructive criticism (or sometimes not-so-constructive) and emails filled with funny .gifs, I figured there’s no better way to celebrate than by giving away three packages loaded with a few of my favorite ingredients (like dark chocolate chips, coconut oil, and naturally colored sprinkles). There may also be a bottle of that 12 month aged vanilla extract tucked inside, along with two new products I’m launching later this year. Plus a doughnut pan, the best spatula in the history of spatulas, and a copy of Green Kitchen Travels because it’s my favorite cookbook right now (it isn’t 100% vegan, but many of the recipes are and those that aren’t can easily be adapted to suit your dietary preferences).

So how do you enter? All you have to do is comment below (if you’re not a first time commenter, you’ll get two entries) (no need to let me know, I can tell if you’ve commented before), telling me your favorite breakfast food (and why) or what you like to do with your free time or if there’s a new kitchen tool/ingredient you’re crazy about. Anything, really. And because I don’t like to discriminate against people and their various geographic locations, we’re opening this thing to the whole goddamn world. I’ll draw three winners on Tuesday 7 October and will notify them via email, so please comment with an address you check with some sort of frequency. GIVEAWAY IS CLOSED! Winners will be notified later today.

From the bottom of my guts, thank you for visiting my little expletive-filled corner of the interweb.

Notes: If you don’t have coconut sugar, feel free to use regular cane sugar, sucanat, brown cane sugar, etc. Make sure the almondmilk is room temperature, as any cold ingredient will cause the coconut oil to solidify. Whatever you do, do not warm it on the stove to speed up the process – if it’s too warm it will make the batter lumpy and the doughnuts won’t bake properly (trust me, tried it). If you’d rather these be plain ol’ chocolate glazed doughnuts, replace the toasted coconut almondmilk with Califia’s original or unsweetened variety and finish with sprinkles, crushed nuts, pretzel pieces, etc. You can prepare the doughnuts in either a normal or mini size doughnut pan. This recipe will make 12 normal doughnuts, 24 mini doughnuts, or 6 normal and 12 mini. The glaze recipe makes just enough for the doughnuts, so if you’re looking to give them a heavy dip, increase the powdered sugar to 3/4 cup, the cacao to 1/3 cup, and the toasted coconut almondmilk to 3-4 tablespoons.

This post is sponsored by Califia Farms. All opinions are my own, and I think Califia rules.

Doughnut batter
1/4 cup unrefined coconut oil, melted
1/2 cup coconut sugar
1 teaspoon pure vanilla extract
1 cup Califia Farms toasted coconut almondmilk, room temperature
1 3/4 cups unbleached flour
2 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
1/4 teaspoon ground nutmeg

Chocolate glaze
1/2 cup powdered cane sugar
1/4 cup cacao powder
2-3 tablespoons Califia Farms chocolate coconut almondmilk

Toasted coconut (flaked or shredded)

Preheat oven to 325˚F. Lightly spray two 6 cavity doughnut pans with oil; set aside. Line a drinking glass with a piping or ziplock bag; set aside. In a large mixing bowl, combine the oil, sugar, vanilla extract, and almondmilk; whisk thoroughly to combine then set mixture aside for 10 minutes to allow the sugar to dissolve a bit (if using brown sugar, you can skip this step). In a small mixing bowl, whisk together the flour, baking powder, salt, and nutmeg. When the wet mixture is ready, create a well in the center of the dry ingredients and pour in the wet ingredients; whisk in just until the lumps disappear (be sure not to over mix or else your doughnuts will be dense). Pour the batter into the bag and (if using a ziplock, snip the corner about 1/2″ up) fill each doughnut cavity 2/3 full. You should have just enough batter to fill the two pans. Bake at 325˚F for 15-16 minutes, until golden. Remove from oven and let cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.

While the doughnuts are cooling, prepare the chocolate glaze by sifting together the powdered sugar and cocoa powder. Whisk in the chocolate coconut almondmilk, 1 tablespoon at a time, until the glaze reaches the desired consistency. When doughnuts have cooled, dip into glaze then transfer to a baking sheet lined with parchment paper. Sprinkle with toasted coconut. Let the doughnuts sit until the glaze has hardened; about 1 hour. Doughnuts are best served the day of, but will keep at room temperature for up to three days, loosely covered with plastic.

Yield: 12 doughnuts

    First of all… you’re awesome.

Second- I’m pretty obsessed with chilaquiles right now… it’s the best way to use up tortilla chip crumbs and leftover veggies. I’m pretty much down for anything that involves Mexican inspired breakfast…

  • Reply Sheree 30 September 2014 at 8:13 AM

I’m a donut kinda girl (already have my own doughnut pan so if I win, you can send one to someone else!) and these look scrumptious.

And if ever you feel compelled to create a recipe for those sour cream doughnuts (the ones where the edges get all crackled…I’m pretty sure they’re fried, though)…I’d be ecstatic.

  • Reply Lisa 30 September 2014 at 8:19 AM

I’m team steel cut oats! Because they’re delicious and fiber filled. Currently into cooking them with a banana and some PB – it tastes like PB cookie breakfast in a bowl.

p.s. This giveaway is awesome – and your blog is the best!

that is one amazing giveaway! happy three year blogiversary- it seems like so much longer than that. donuts hold a very special place in my heart. they were my all-time favorite breakfast food growing up, particularly ones of the chocolate coconut cake, powdered boston cream, crumb, and pink glaze variety ;)

  • Reply Kelsey 30 September 2014 at 8:21 AM

I’m a big fan of overnight oats (steel cut oats). I love to top it with pecans, coconut, cinnamon, honey and fruit!

BAKED doughnuts! YES! I do not have a doughnut pan, and if I did, I would make these ones topped with caramelized ginger…. because for some reason, ginger-chocolate sounds like a really good combo to me right now. My favourite breakfast food is, and always will be, shakshuka. I’m an eggs-for-breakfast kinda gal at heart… But the healthier me now has vegan smoothies for breakfast. Daily. I know, kill me now (just kidding, they’re actually delicious. Usually). Thanks!

my favorite breakfast go to food would have to be a fig-banana shake. deliciously simple and super filling :)

  • Reply Rachel 30 September 2014 at 8:36 AM

What perfect timing!! So excited to try these donuts as I just purchased my first donut pan and I cannot wait to use it! So cool. I am totally with you about bakery donuts – though delicious they make me feel kind of bad. Love the ingredients you use and Califia almondmilk is the best. They just started carrying it at my local regular supermarket and I’m psyched :-) used to have to make a special trip to Wholefoods but no more!

  • Reply Nicole 30 September 2014 at 8:43 AM

I’d take one of those doughnuts for breakfast for sure! But on the average day, I love almond yogurt & berries, or overnight oats. Keep up the great work you do on this blog. You’re amazing.

  • Reply Elizabeth 30 September 2014 at 8:46 AM

My favorite breakfast is banana (or apple since it’s fall!) sprouted wheat pancakes! It took me a while to get the recipe just right, but now that it is I just want to eat them all the time. But since I am usually running late and don’t have time to make pancakes a bowl of oatmeal with maple syrup, cinnamon and nuts is my go to! Two products you MUST try: boiled cider, which is made like maple syrup but instead of boiling down sap, they boil down apple cider. It is sweet and tart and so amazing! I add it to apple pie, oatmeal, cocktails, baked goods, etc. The second one you must try is Mike’ss hot honey, it’s honey made with chiles and it is the bomb. I want to put it on everything! It’s great is guac, drizzled over pizza, and I still working on some recipes, but I’m sure it will be making appearances in baked goods soon!

Thank HEAVENS I found your blog/insta this week. When I was little, my Gma used to make us little donut holes and my sister and I would stand right behind her like total creepers until they were finished, haha. I’ve JUST started getting into baking and cutting down on sugar when I do. I also, crazily, signed up for a marathon in November as way to get in shape, so in my spare time I’m learning how to fall in love with running. So, thank you for showing us how to balance everything in life – donuts AND exercise!

PS. Favorite breakfast food – french toast with mounds of powdered sugar. Hands down.

    Thank you for this giveaway!

Breakfast is my favorite so it’s hard to choose, but I think I’d go with perfect warm and crispy waffles. With a banana and peanut butter on the side. Absolutely love your blog!

  • Reply Anze 30 September 2014 at 9:02 AM

I higly enjoy having a pesto sandwich for breakfast. I spread some homemade basil, spinach & cashew pesto on toasted homemade seedy spelt-buckwhear/gluten free bread, add a handful of spinach, top it with some italian marinated tofu, tomatoes and top everything with a healthy amount of chilli powder, flaky sea salt and black pepper (I like my breakfasts spicy). If I’m feeling a bit fancier I’ll have banana french toast with a spinach banana berry peanut butter smoothie. I also like my breakafast on the big side tbh (don’t call me fat!!!!!!!).

I can’t say that I have a favorite kitchen tool, but I do love my stand mixer, and I always appreciate a good spatula. I’ve actually been thinking about picking up some of the GIR ones!

Side note: I love your profane corner of the web. I could spend all day staring at your photography! You’re an inspiration, and hopefully one day I can make a really great space like yours! #foodismyfreetime

  • Reply Anna W. 30 September 2014 at 10:19 AM

Breakfast, to me, is the best meal of the day. It doesn’t matter how goddamn early I need to be out of the house in the mornings – I always make sure to have my (approximately) 45 minutes of quiet breakfast time to myself. Otherwise you will meet a very grumpy version of yours truly for the rest of the day.

So what do I have for breakfast? Usually I aim to keep things simple and on the healthy side: coffee or green tea, homemade granola with yogurt or Skyr, avocado on toasted sourdough, etc. Yet sometimes (mostly on weekends) I get a little crazier and treat myself to pancakes, french toast, or baked spicy Mexican eggs.

Anyway, breakfast rules the world, and your blog rules the internet! Thanks for sharing all your recipes with us, Ashlae!

I adore your expletive-filled corner of the interweb. Yours is indubitably the best in existence – and I really do mean that. (I am not, and never have been an arse-kisser, so this is 100% the truth.)

My favourite breakfast food is waffles. Good old fashioned Belgian waffles. I’m probably only saying that because I don’t have a waffle iron (and have had the WORST luck with waffle irons so have not been successful in making waffles myself) and haven’t had a decent waffle since I left Belgium and became a vegan. I’m making myself hungry just talking about it. UGH.

(And so I guess my favourite kitchen gadget would be a waffle iron, if I had a decent one.)

I apologise in advance if I am one of the three lucky winners because the postage fee will be redonkulous. But I’ve never owned a doughnut pan so I’d be super thrilled if I did win. xoxo

I made a special trip to that very Voodoo Doughnuts of which you speak, and then went to the neighboring park and devoured way more of them than was healthy. I’ve never met a doughnut I didn’t like!
I have two favorite breakfasts, one is for nostalgia and the other is for its sheer genius. Nostalgia: My dad’s French toast. The secret is all in the bread- thick cut slices of cinnamon raisin bread with a glaze on top. Genius: Baked oatmeal. When I have the time to plan ahead, this warms me from the inside out!
Speaking of toasted coconut, I’ve been dreaming about making my own marshmallows and rolling them in toasted coconut…

I have been having the same breakfast everyday for maybe 7 years now. Plain rolled oats, two servings of whatever fruit I happen to have, ground flax and non-dairy milk. It isn’t inspiring, but it allows me to eat before I wake up, and leaves my imagination for other meals, especially 3pm, aka the snacking hour. I look forward to trying these donuts some indulgent afternoon, which my boring breakfast makes possible.

My go to breakfast is a green smoothie. Put an apple, a stick of celery, a couple of inches of cucumber, half a lime and a piece of fresh ginger in a juicer, then mix said juice with half an avocado. Adding beetroot to the juice mix also works really well. Super tasty!
    Have a great tuesday! / C.

These look delicious and I can’t wait to give them a try! I’ve recently jumped on the avocado-toast bandwagon for breakfast. It’s delicious and all those healthy fats make such a luxurious-feeling breakfast! (and I am OBSESSED with my immersion mixer – seriously, how did I make soup before owning one of these?)

  • Reply Lisa 30 September 2014 at 12:38 PM

This blog is the best! Out of curiosity and slight creepiness I tried to find your first blog post the other day… didn’t notice (or look for) the date. Definitely creepy.

My new favorite kitchen tool that I am totally overly obsessed with is my stand mixer. Not super exciting, but my best, best, best friends just bought it for me for my 30th birthday and I am obsessed. I always joked that I would have a ‘life-shower’ if I wasn’t married on my 30th so I could get things like a stand mixer and a sick vacuum cleaner. Clearly I am not married, so they went and bought me a stand mixer. Hoping the dyson comes when I turn 31.

I know it’s weird that I love convenient house products so much.

My favorite breakfast is pancakes. Yup… just pancakes. Not really interesting, but the possibilities are endless with pancakes. In my fat-kid days I made them with M&M’s. Now I prefer blueberries. I even tried adding mochi this summer. It was weird, because it’s too chewy for pancakes, but like I said, the possibilites are endless.

    Ok. I’ll stop rambling now.

I am lucky enough to work at a little brunch cafe that spits out trays of these beauties faster than you can even say “breakfast”. They’re my favorite because they are perfect on their own, with a little bit of butter, or as the perfect Sammie with some egg & cheddar or sausage & jam! Happy Blogiversary!

Your little expletive-filled corner of the internet is one of my favorites! Shakshukah (the spicier the better) is the best way to start the morning. It wakes my taste buds up and I make the whole dish using one pan– a cast iron skillet. Less clean up, happy lady. I love hiking in the Aspen trees (and based on recent studies I should get that in now while I can…sad face.) And my favorite relatively-new kitchen tool is a spiral peeler/slicer. It’s brilliant! Enjoy your day, Ashlae and I’ll email you about Indian food– you know where! (I might have neglected to say the entire restaurant is vegetarian…options galore!) xo

I have been following your blog ever since I started eating a whole foods, plant based diet 2 years ago. As a college student I have had minimal access to a kitchen, except for the times I go home and make delicious vegan meals for my meat loving famblam. This year is my first year with a real kitchen and I’ve been lovin’ experimenting with different ingredients and trying new recipes. My absolute favorite breakfast of all time is vegan cinnamon rolls with a cup of steaming hot chai tea. Cardamom cinnamon rolls to be exact. I turn 21 next week (Oct. 9th hollllllla) and plan on making them to celebrate, but I will be replacing the tea with champagne ;)

If I had a donut pan I would make these RIGHT AWAY! My first ever donut was from a Dunkin’ Donuts in Munich, where I live. It had a chocolate glaze and a Nutella filling and it was sickeningly sweet :D I was SO disappointed! So this happened like 1/2 year ago and the second donut disaster happened just a few weeks ago, on Pikes Peak. I visited my exchange partner in Colorado Springs and we went up there and had their famous donuts. They were just gross :D
So, bought donuts couldn’t quite convince me until now and I also don’t really like the traditional german fried pastries :/ baked donuts sounds like the perfect solution to me! ;) Plus yours look sooooo pretty! Do you think I could just bake them in a muffin pan and call them donut muffins? :D

New kitchen ingredients: first thing: instagram. Then: if it’s a spice: put it in every single meal you cook. if it’s something else/something you invented yourself or discovered: eat it as a side to every single meal/ try crazy variatons with that one thing.

oh dear, how does one decide a favorite breakfast food? it depends entirely on the time, on the mood, on the weather, on the company! i love breakfast!
for those autumnal, comforting, solitary, reflective mornings with a book and warm cup of coffee, i love oatmeal (oatmeal with, perhaps, honey, peanut butter, a little almond milk, flax seeds, scattered almond bits or dates…)
for a sentimental, nostalgic-for-europe morning… a toasted baguette with homemade jam.
for a breakfast with family and friends: vegan omelettes/scrambles, roasted vegetables and potatoes, toast with jam or cinnamon!
and for those oh-so-loved indulgent mornings… a stack of chocolate chip banana pancakes, or vegan blueberry belgian waffles, or sweet crepes, or french toast with maple syrup and fresh fruit, or a vegan maple donut… ahhhh, heaven! :)

  • Reply Sophia 30 September 2014 at 3:51 PM

My favourite breakfast food very much depends on the season – during the winter I like to start my morning with a big bowl of oatmeal and a steaming mug of coffee, once it gets warmer I am all about the cold brew almond milk lattes and chia pudding or smoothies. And, when I am really lucky and have some freshly baked sourdough bread at home, a toasted slice of bread topped with walnut butter, acacia honey and some Maldon flakes is a damn fine way to start the day. That being said, there was a time at university where I started most of my days with cheap coffee and a huge doughnut from the cafeteria on campus – the inevitable sugar crash around 10.30am was epic but that sugar high got me through my first couple of lectures time and time again.

Happy blogiversary – I cannot believe it’s only been three years, it seems like you have been around this space for so much longer! Intrigued to hear about your new product – will you reveal what it is on the blog?

i’m vegan, and my sister-in-law, whom i’m currently living with, is vegetarian.
we were recently in france together, and she picked up a tool from a thrift store that is a small, slate cutting board surface with a thin, sharp metal wire attached which you can lift up and down. apparently (and very sadly) it’s used for foie gras… however, she believed in its potential redemption…
taking it back to the states with us, we use it as the PERFECT and most EFFECTIVE cheese and tofu cutter!!! it’s seriously magic. magic!!!
and voila… redeemed from its former cruel ways :)

I can’t believe I’m going to admit this, but my favorite breakfast is on Sundays during Pirate or Steeler home games. My BF and I bike along the river to a local restaurant in an old train station where they still have one of those conveyor belt donut machines frying up donuts in their own little lazy river of oil. I wait with my little plate poised at the end of the conveyor belt for the hot donut that churns to the precipice then plops onto my plate. It gets buried and swirled in the giant bowl of cinnamon & sugar, then I walk over to the bar and wash it down with a Ketel one screwdriver. Our own little personal tailgate party! Heaven…then the sugar rush/buzz deliriousness sets in.

Absolutely freaking amazing!!! I am drooling right now. My favorite brekky is yogurt and granola with pieces of seasonal fruit…which, I must say has been a little bit complicated by going vegan earlier this year. Anita’s makes a mean coconut yogurt here in brooklyn, but it’s still not the same. Tonight’s dinner will be beans and greens minus the butter: ( )…and I’m super tempted to invest in a vitamix. Thanks for putting such good content up on the interwebs.

  • Reply Rainbow Koehl 30 September 2014 at 4:35 PM

I would love to eat these doughnuts, but in the evening. Sugar and me in the morning do not jibe well together. It gives me a headache and then I crave sugar all day long (horrible self-perpetuating cycle that makes no sense).

For the past few years I’ve been having home-made oatmeal with assorted nuts, dried fruit, berries and my mixture of milks every day (I even prepare single serving packets for when I travel). But, I’m finally getting a little tired of that. So now it is whole grain toast with a nut butter and then a small bowl of plain goat yogurt with blueberries on top. It is really great and, like the oatmeal used it do, it fills me up till lunch.

I really enjoy your blog, but I wish one thing was different: that there was a comment section after an entry for just oohing and ahhing comments and then another for people who have actually made the recipe and have some feedback.

My absolute favorite breakfast recently changed to pancakes to waffles, for a few reasons. First, I found this incredible vegan and gluten free waffle recipe that is considered “healthy” in my books. In my opinion waffles are also versatile. There’s endless opportunities of toppings, my current favorite is raw almond butter, banana and cinnamon. Second and most exciting reason is that my husband just got me the All-Clad waffle maker, and I’m convinced it’s probably one of the best to have in a residential kitchen. After unsuccessful experience with a few cheaper makers, I was on a mission to find THE one, and I couldn’t be happier.

I really have a special place in my heart for plain old fashioned oatmeal. For the past 2ish years, there has probably only been a total of 5 mornings where I actually ate something different. I always have fruit on the side, and while I always tell myself I should actually mix it INTO my oats, or try a new topping, I really am content with it just the way it is. I cook it up really thick, like until it’s sticking to the bottom of the pan and in danger of burning. Mmmmm I can’t wait for tomorrow morning!

These donuts look so delicious. I think I could definitely be happy with this in place of my favorite donut of all time – VooDoo’s maple bacon. I’ve only had a half of one of those ever, but it will stay with me for all time!

These are so A+! Going to college in New England, I totally stalk Voodoo and fantasize about having them shipped here. I even tried to scheme a trip during a layover in Denver last month. Too far to be feasible, unfortunately. My fave b-fast is a hearty serving of oatmeal in with almond milk, a good veggie stuffed omelet, and something I can smear peanut butter on. (Banana bread please?) Not ashamed to go heavy on the breakfast. Gotta run gotta eat good stuff.

  • Reply Lyla 30 September 2014 at 7:01 PM

I have been on a vegan diet for only two months, so I don’t yet have a favorite breakfast. But I have been using my vitamix and find it very useful. I have used it to make salad dressing, oat flour, bread crumbs, banana ice cream, soup, and smoothies; it is a wonderful machine.

Ahh those doughnuts look amazing. I’ve never made doughnuts before, but this looks doable since there will be no boiling oils and other dangers. Thank you for sharing! Hmmmm well uni just started up and I’ve been completely overwhelmed with work, so I’ve been making lots of smoothies with frozen fuit lately which I really love having with me throughout the day. Thanks for always sharing such wonderful recipes!! xx

My favourite breakfast would most certainly be vegan french toast, with lots of maple syrup and berries. But on normal weekdays, I usually have apples + tahini + honey on toast. So damn good. Congratulations of 3 years of awesome, girl! Keep it up.

Ohhh my goodness. I have ordered your vanilla before, and the thought of winning a wonderful little baking bundle of wonder with a bottle of that tucked in makes me verrry happy. That stuff is liquid gold.
Breakfast is my favourite meal of the day(hmm besides dessert, but I often do some sort of a combo of both, and then I’m in business). My fave as of right now, is toasted oatmeal (“toast” oats in a bit of coconut oil until fragrant, remove from pot, add almond milk+cinna+pinch of salt to pot, bring to low boil, add oats back in, remove from heat, cover, let sit for about 8-10 mins) topped with dried apricots, fresh raspberries, a sprinkle of granola or mixed nuts, annnd a few mini chocolate chips. Yum!

Thanks for another delicious recipe post Ashlae!

    1. Steel cut oatmeal made from the Vegan Yum Yum app
    2. My husbands soft scrambled eggs in butter
    3. Bacon, Bacon & more Bacon

Order of my favorite breakfasts. But really nothing compares to sitting across the table of my husband regardless of what’s for breakfast. Nothing beats love.

Hmmm well my fave breakfast depends on the day of the week. Saturdays and Sundays I love just about anything labor intensive and sweet (cinnamon rolls, waffles, pancakes requiring several kinds of flour etc) weekdays I’m an all apple cinnamon almond butter oatmeal all the time kinda girl. In my free time I love distance running (welcome to the cult!) yoga, rock climbing, & cooking. I love too many of my kitchen tools to choose just one or twelve.

  • Reply Melanie shanks 30 September 2014 at 8:24 PM

So I usually eat fruit or a smoothie for breakfast. But let’s be real, all I really want are cinimon rolls…cus theyare the shit. Before I went vegan, I could prob eat a whole pan of those Pillsbury ones. Now I have to be content with making my own from scratch. Which is amazingly impressive but takes longer then 10 min. Give me all of your goodies please. Or better yet. Since we are neighbors… Just bring me some. Thanks ;)

Um, you are kinda really awesome. I love your posts, and this giveaway is the best.
I indulged in two chocolate donuts this past Saturday and immediately regretted it. But normally I’m an oatmeal for breakfast person. If you stick anything with chocolate in front of me though, that’s going to disappear, no matter the time of day.

Hi! I am new at the leaving a comment thing (not to your blog though) but I just don’t have the habit of commenting. Sorry! I’m originally from Argentina but I am now living in Pasadena with my boyfriend doing graduate studies (almost went to Denver! -J.Korbel School). So no need for international shipping ;)

I’m very bad with breakfast because I get that it’s the most important meal of the day and bla bla but I just like having cookies and milk. Usually, vanilla cookies with chocolate chips. Simple as that. With cold milk just out of the bottle. Sorry about the lack of fanciness hehe. I really like baking stuff but I’ve just got this new place and only have a round baking pan for like pizza and stuff. Sorry — running on a international grad student budget!

Anyway, thanks for keeping up with the posts.I enjoy reading them (not in class, of course ;) )

Also, I’ve been reading for a while (not sure if I’ve ever commented?) and I just want to say your pictures are always so beautiful! Not to mention pretty much every post of yours makes me laugh. So keep up the good work!

I just found your blog recently, and so far, so good. So good! Tasty little vegan treats are my thing. And you make it all so visually appealing. My favourite breakfast is oatmeal. Why? Because it’s warm and mornings are cold. I live in Squamish,BC where it rains a lot. Oatmeal, with chia seeds and almond milk, vanilla, bananas, apples, cinnamon. A bowl of warm goodness! It gets me out of bed on the coldest and rainiest of mornings.

At first I thought we got to answer all three of those questions and I was super excited……. Then I realised I read it wrong, but no matter, it just means I have less time to put off studying for my major final exams. Damn.
I am a real breakfast girl. Or maybe a breakfast hobbit. First breakfast, second breakfast, elevensies, you name it. If there’s a time and a place for eating breakfast food, I’m there (and yes that includes muesli in a mug at 5pm).
The runner/health nut in me is dying to say that a green smoothie – bananas, almond milk, a hell of a lot of greens and maybe some spirulina if I’m feeling fancy – is by far THE BEST breakfast. But I will also never turn down a bowl of warm oats or spiced Moroccan quinoa. Especially in winter. Especially if it’s topped with stewed fruits (plums, rhubarb and apple, anyone?).

Ok, so I’ve recently developed this obsession with donuts. Now it’s important to note, that we don’t have much to offer on th donut front here in Amsterdam, or Europe in general for that matter, so I resorted to my local supermarket and their icky, in-house bakery, prepackaged sugar donuts, portably laden with e-numbers and all the crazy Chinese hair powder one can imagine, but don’t judge. I can’t help it.
But maybe now, only maybe, I can slowly recover from this addiction, starting by making your healthy version instead. My body and health thank you kindly!

As for my breakfast ( what, you didn’t think I’d skip a chance to win some of your amazing vanilla extract?!), these days it’s usually black tea with a splash of milk and some honey and then later in the morning either a greenish smoothie or a piece of bread with a big shmear salted butter and one of my mom’s homemade jams on top.

My favorite first breakfast is a green smoothie packed with almond butter, hemp hearts, cold-brewed espresso, baby spinach (I swear it doesn’t interfere with the espresso), frozen and unfrozen bananas (must have both), oat milk and cacao. Second breakfast usually involves oats in some form or another.

Yoghurt with anything thrown in. Because it’s cold? And tangy. And lovely with a bit of colour (blueberries) and crunch (toasted maple almond bits) and a swirl of something (pale, creamy wildflower honey). My favourite post of yours is the one with the sweet potato waffles in it, because that is exactly how I feel sometimes.

    Giveaway, yay! Happy blogiversary.

I’m hoping to win this giveaway so my new favorite breakfast can become these donuts (since a donutpan would be a much-needed addition to my sparse little kitchen). However, until then, my favorite breakfast is more like breakfasts, since I’m happiest with long breakfasts with multiple parts: super spicey oatmeal (the more cinnamon and ginger and nutmeg, the better), berries in papaya (called paw-paw here in South Africa), coffee, carrot-ginger juice, and maybe a piece of tempeh bacon or three. And super hearty toast with almond butter. And a smoothie while I’m making all of that (because I’m not very patient when it comes to waiting for breakfast in the morning).

As for favourite past times, reading foodblogs ranks up there, along with playing tennis, painting (with a glass of wine), hiking around my hometown of Phoenix, camping (and certainly cooking on a campfire), and teasing my neighbours dogs.

Thanks again for such a fantastic giveaway!

  • Reply Cristina 1 October 2014 at 9:33 AM

So first off, coconut oil spelt pie crust making went superbly well and Friday night was spent devouring an absolutely glorious peach pie. (The guys in a band with me were incredibly appreciative, especially the one who is actually vegan instead of a carnivorous meat eater like the rest of them. That being said, the pie went down a storm with all of them because let’s be honest, if you’re gonna make people pie – especially hungry 20 musicians – then they’re gonna love you.

Second off, if I had a doughnut pan I would get my ass in the kitchen and make these right fucking now. As it is, I think I’m just gonna get a date, stuff it with cashew nut butter, and come back to my laptop and read this recipe again.

Third off, favourite breakfast food: buckwheat pancakes. Or avocado toast. Or banana oatmeal with nut butter. Fuck it, just give me all the breakfast foods.

Ashlae, you’re just awesome. Ever since I happened upon your blog last year the highlight of my internet exploration has been reading your thoughts on life, love, and the pursuit of vegan food. I am so in awe of your honesty and drive. I try to be as half as unapologetically tenacious as you with the writing on my own blog and in my life. It’s so wonderful to know someone else out there values love the way I feel I do. I’ve commented once or twice in the past, but I should really do that more often, as I’d like you to know how positively your thoughts affect me.
Anyway, favorite breakfast food: homemade no-added-sugar larabars (dates, almond butter, oats, pistachios, roasted whole almonds, sea salt, cloves)- I’m a college student and these are the easiest to make ahead and grab on the way to class!
Favorite thing to do: make food for my cooking blog! Baking is my emotional homework.
Favorite new kitchen gadget: I have yet to actually own this, but I really want to get a spiral slicer so I can make veggie “noodles”. In the meantime, I’m happy playing with my good ol’ food processor!

Fantastic giveaway, I look forward to reading your blog for many future blogiversaries!

I used to have a thing for Dunkin’ Donuts’ Boston crème donuts, which fortunately didn’t last long/ruin my life. (Ensuing sugar high not worth the temporary bliss.) Our traditional Israeli breakfast always includes a chopped tomato and cucumber salad; leftover salads in general are fair game for fast morning food, especially folded into bean tortilla wraps. A recent Australian breakfast rekindled long-dormant love of muesli soaked overnight in apple juice – omg, so yummy! Long live breakfast time!

Or my husband sometimes makes Tortilla Española with chickpea flour and it is delish.

I can’t believe I haven’t seen your blog before today, btw! I live on the front range and I am excited to have found you. :) I googled “vegan ice cream cake” and stumbled upon your recipe. Yay! Gonna make a vegan ice cream cake for my friend’s bday in a couple of weeks.

The best ones are always in the summer when cherries or peaches are in season, and of course you have to top it with some fresh whipped cream! We also just bought a Blendtec blender and I’m wondering how I ever got by without it!

Bagels with poppy seeds, creme cheese and smoked salmon.

The textures, the hot/cold, the sweet/salty, the crunchy/soft (does it show I’m all about contrasts?). It’s so simple yet so delicious. I love bread in general but butter doesn’t cut it. This breakfast is quite filling too, with a nice cup of coffee or tea!

My favorite breakfast food…I love anything sweet yet hearty yet not painfully filling. I like yogurt with granola and fruit or a bowl of oatmeal with tons of cinnamon and fruit and nuts or a protein pancake topped with melty peanut butter. All the breakfast foods (gluten free please), give them to me :)

So happy blogiversary to you and ohladycakes, your writings always stand out somehow (in a positive way :)
I would love to win the package, too, of course so: My favourite breakfast is some kind of cooked or soaked pseudograin like buckwheat or amaranth with some nuts and raisins, paired with cashewcream and warm fruit. Usually i sprinkle some beepollen, barberry or cocoanibs on top.
And the kitchenutensil i am crazy about at the moment is in fact my spatula, because it really catches every little drip of whatever i´m scraping out of a bowl or dish, so i already own the perfect spatula but can you ever have too many perfect spatulas?

My favorite breakfast is usually a rice porridge, but if I’ve forgotten to get it started in my slow cooker the night before, then I make oatmeal. I’ve also been experimenting with overnight oats (in a variety of recipes), which are super easy and tasty too!

I’ve had my eye on a donut pan for some time and have gone back and forth over whether to buy one and figure out where in my cramped kitchen I’d store it! I know my kids would be HUGE fans!

And probably my all-round favorite kitchen tool are my pressure cookers (and yes, I have different sizes). They are simply FABULOUS! Seven minute risotto that you don’t have to stir? Check! Fantastic soups? Check! And you can even steam a cheesecake in it!

Woohoo! I’ve been reading your blog for 2 out of 3 of those years, yet somehow I’ve never posted before, even though I have loved every recipe I’ve tried from here (especially your caramel-swirl apple cake, oh my life) so here it is finally: THANK YOU! For your recipes and words and loveliness.
Anyway, BREAKFAST, my all time go-to favourite looks something like this: wholegrain sourdough toast, a thin spread of salted date caramel, a thick spread of my favourite peanut butter, a banana, either sliced or smashed, and a sprinkle of cinnamon all over the top. And popped back under the grill for a few minutes, so the peanut butter melts and the cinnamon-coated bananas turn gooey and caramelly. :)

Fave breakfast? That’s pretty hard considering breakfast is the best meal and there are so many wonderful options! I will go with waffles. Hearty, healthy, vegan waffles topped with some sort of nut butter, maple syrup, and maybe some chocolate chips ;). Can’t resist them and they are so much easier to make than pancakes! Love your blog and thanks for doing this giveaway!

Awesome recipe Ashlae! Finally I find a good baked doughnuts recipe. They look so good, that shiny glaze makes them even more irresistible and I also love that I have all the ingredients in my kitchen pantry…so that means I’ll have doughnuts for breakfast this weekend, yay! ;-)
Well, my favorite breakfast food are pancakes (the ones I make are vegan and so fluffy). Why? Because they have the right touch of sweetness and tenderness, they give me that cosy feeling to start off the day with a happy belly.

  • Reply Ashley 1 October 2014 at 4:16 PM

Your vanilla extract has been on my must buy list for too long! It sounds dreamy.
Oh breakfast, I love you so. Recently I have been puréeing our veggies from the night before and mixing it into our pancake batter. Beet pancakes, carrot pancakes, squash pancakes.mits absolutely fantastic. And because the veggies were roasted in olive oil and possibly balsamic, they are loaded with sweetness, therefor syrup isn’t really necessary for the pancakes. But I don’t judge if you use it.

I too love Wes Anderson and am hard pressed to find affection for mushrooms. Many a morning runs past me currently without a conscious breakfast consumption happening…coffee is inhaled at illegal speeds on the way to uni…once settled in a lecture or slumped at a screen, I concoct (with many small clicky containers and the occasional thermos), a brunch of oats, blueberries, LSA, almond milk, boiling water, a banana and coconut yoghurt! love your work! all the way from New Zealand (:

The breakfast food that holds a special place in my heart would have to be pb&j roll ups. My mom would always make cinnamon pancakes, lather them with peanut butter and jelly, roll them and stick a toothpick in it to hold. They wouldn’t win any culinary contests but they’re very nostalgic for me because we always had them for early school mornings and long car rides.

Hi Ashlae, happy 3rd anniversary for Oh Ladycakes! My favourite breakfast is indiappa or stringhoppers as they are called here in Sri Lanka. They are made with rice flour and water, pushed through a hand held gadget with little perforations at the end. What comes out look like very thin noodles. The gadget is swirled till there are several small circular flat piles of rice flour noodles. These are then steamed . I like to eat indiappa with kiri hodi (a pale yellow coconut gravy spiced with turmeric, fenugreek, curry leaves and pandan), pol sambol, (made with fresh grated coconut, shallot, dry red chilli and lime), and a spicy curry (soya and potato curry or mushroom curry). I usually wash it all down with a talk glass of cold water :). I love indiappa because it’s comforting and tasty and can only be eaten on days when I have time to have a long and leisurely breakfast.

In my free time I like to read or sit in places where there are lots of trees and few people.

AMAAAAZING! You are so great and I’ve followed you for a while but for some reason never commented. For breakfast right now my favorite is either a green smoothie (packed with spinach/banana/coconut water/spirulina/hemp protein/stevia leaf and fresh mint from the garden) OR a vegan/gluten free muffin full of fruit (or banana/peanut butter) recipe I got from peacefood cafe in NYC. I love to run/do yoga and make jewellery AND my favorite kitchen utensil right now is probably a lemon juicer – I use it multiple times a day and feel like it extracts more juice than my small hands could muster out.

I know this will sound weird, but I lived in Portland for three years and never once ate a Voodoo Doughnut. They always just seemed a little overwhelming to me, what with the bacon and cereal and stuff on top. Your pic of the cinnamon and chocolate ones looks good, though.
My favorite breakfast food is not doughnuts. (Which is probably not surprising, given the above admission.) If I’m making breakfast, I’d say it’s baked oatmeal — it’s so versatile and filling and it makes my house smell fabulous. If I’m going out to breakfast, though, it’s pretty much always Eggs Florentine.

Breakfasts are for hot coffee and berry bowls with bananas, chia seeds, hemp hearts, buckwheat groats, and toasty granola.
I’m a minimalist in the kitchen, so I am digging the stovetop espresso coffeemakers, for just pretty damn strong coffee.

Thanks for being colorful you, and thanks for always sharing!

I just discovered your blog probably through hours of mindless pinning… Any way, breakfast! Bacon. Always bacon forever and ever amen. Almost burnt, extra crisp and right out of a cast iron skillet. Does it not get any better/greaser than that. It’s so savory amd delicious and satisfying, how could you just not love it?

THESE DONUTS LOOK DELICIOUS! Coconut and chocolate = best food combination ever. And I love donuts so much. My boyfriend and I thoroughly enjoy making tofu scrambles for breakfast and spinach mushroom strata.

Well I am a first time commenter, I think I found your blog three or four posts ago? Time starts to wash away the memories since it’s all really relative and timey whimey. My favorite breakfast food happens to be not eaten at breakfast, but as an evening ‘snack’. Oatmeal (specifically the Love Grown Foods brand because once you find one that you like you stick with it), a little cocoa powder, cooked in the microwave with water (one less item to wash) then add some maple syrup (or hickory if you find it) and greek yogurt. A filling end to the day!

  • Reply Tanya 4 October 2014 at 4:03 PM

These are going on my “need to bake” list, which is populated with recipes from your blog! My everyday breakfast is oatmeal, but I get creative with it (carrot cake oatmeal, blueberry lemon poppyseed oatmeal, sweet potato apple orange oatmeal, ect). I teach a bootcamp at 5:30AM then head off to my other job at an office, so when I get home from bootcamp I mix up my oatmeal ingredients, through it in the oven, and my oat “muffin” is done by the time I get out of the shower. Bam. Done.

I love doughnuts, but they always seem like a special occasion breakfast. I’ve been mulling over a doughnut pan purchase for months now. It would be a nice change from my usual granola. If I ever splurge for breakfast at home it’s usually for muffins.

  • Reply Jessie Smith 4 October 2014 at 8:39 PM

I will soon be running by that Voodoo having to avoid it’s seductive smell of sugary goodness too in one more week! Could really use a donut pan to help curb the cravings with some homemade versions ;). Plus I am freaking in love with Green Kitchen Stories and your vanilla is the bomb. So this whole post and give away rules. Oh and my favorite breakfast would have to be toast + jam. Give me alllllll the toast. Oh and happy blogaversary!!

  • Reply Brooke 5 October 2014 at 7:53 AM

This is (almost) my first post here (I just posted asking about your chocolate peanut butter whip pie). I would have posted sooner, but I just found your site today! :D

So, I’m not a big fan of eggs and while delicious, most breakfast meats are too greasy (stupid reflux). My favorite breakfast is anything that allows me to eat “normal” food (chicken, spaghetti, etc.). But I have had the occasional chocolate cake or cupcake for breakfast. Your chocolate coconut doughnut looks amazingly delicious!

In my free time, I love baking, eating, reading, watching tv, shopping, and spending time with my wonderful husband. Oh, and spending time with my birds. :D I love all kitchen gadgets and cookbooks. I probably have a problem. We don’t have room for all the cookbooks, kitchen gadgets (manual and electric), and baking equipment (ingredients and bakeware). We’ve had to buy more storage cupboards! Thanks IKEA!!! :D

Those doughnuts look so damn delicious. Can’t wait to try them. I only recently started reading your blog and I just want to say that I love how you tie in personal stories with your recipes.

My favorite breakfast food is a breakfast burrito with beans, egg or tofu scramble and fresh hot salsa and avo. Bonus points if I have fresh cilantro and sautéed onions. Yum. The best one I ever had was from a food cart in Austin, TX. My fiancé, now husband, and I had just started an epic, cross country road trip and stayed the night at a friend’s place in Austin. Before departing on our second day of the trip, my friend said she had to take us for the best breakfast burritos in Austin. It was a perfect morning, the best burritos and foreshadowing of how wonderful and momentous that road trip would be!

I’ve admired your blog from afar for quite some time now (I think upwards of two years)! Although I myself am not vegan, I love the ingenuity and true elbow grease you put into everything you do. It’s hard to find blogs that are so devoted to their readers. :) My favorite breakfast is no doubt pain au chocolat from a secret little café in Paris, but when I can’t have that my grandmother’s buckwheat pancakes with her Indiana honey are to die for. In my free time I read travel magazines (mainly Lonely Planet), books, doodle here and there, and indulge in the wonderful array of our local Cincinnati beers.

Depending on what I have planned for the day, like to eat for breakfast fresh fruit, lemon yogurt or granola. If I feel like having something hot, I like scrambled eggs with jam I know that’s not a usual pairing but I like the sweet & salty combo or oatmeal with peanut butter. I’m going to have to try those donuts too, I love chocolate & coconut pairings :)

Have loved turning to your blog for such a long time, can’t really believe I’ve never commented before. Such honesty, interspersed with darn tasty recipes, makes it pretty addictive reading. And, since you’ve asked…
    1. My favourite breakfast? My easy go to breakfast is homemade mueseli with banana and almond milk, or sometimes avocado on grain-free bread I get from Harts in Bristol, such an amazing little bakery tucked away under a train station.
    2. What do I do in my free time? I’m currently attempting a 30 day bikram yoga challenge, which is taking up hella lot of my free time, but in between I’m knitting a multi coloured scarf or hunting down rosehips to make some more rosehip syrup.
    3. My favourite kitchen tool? My julienne peeler. Such a spiralized vegetable groupie.

Hi so excited for this giveaway congratulations on your blog-iversary!! My favorite breakfast food has to be a big bowl of steel cut oats with all the fixings, lately I’ve been pairing almond butter, coconut milk, coconut chips and banana with my oats. Some times just baked with cherries is perfectly satisfying :) there is nothing more comforting to wake up to, and warm you on any type of morning. My favorite kitchen gadget (unless you count my Vitamix OBSESSION) is probably my new citrus squeezer, I use it everyday and get so much more juice now! But if I had more free time I think I would use it to nurture my own little blog baby, and get cooking up some new healthy recipes to share!

I dollop them medium small so that i can stack them high. Recently I came up with a fabulously delicious addition, spooning coconut milk chia seed pudding over the top. These donuts look crazy good! I’ve actually been on a huge donut kick lately and have gotten addicted to a couple spots in NYC: Doughnut Plant, Dunwell, and Dough. So. Good.

As far as breakfast foods, this is what I consider my “perfect breakfast” which I’m always on the lookout for: two eggs sunny-side up, multi-grain toast, potatoes/home fries, a small portion of pancake/french toast (like half a piece!), a side of fruit, plus fresh squeezed orange juice and fresh coffee. So hard to find this anywhere without ordering two separate breakfasts.

By the way, love following you on Instagram! Thanks for the giveaway!

I stalk you on Instagram more than I do anything else. Your page is so wonderful. I’m 17, and I’ve been baking since I was just a wee little one. I cook every single day. Literally, I cook every single day.
My favorite breakfast food: how could you choose one? I absolutely adore a big ol’ stack of silver dollar (I call them Swedish) pancakes. We have this pan that cooks about 6 at a time, and there’s always the one person at the stove for about two hours making pancakes for my right person family. But it’s so worth it. I also am a sucker for cherry chocolate homemade croissant rolls. A combination of sticky buns and croissants with a ooey gooey chocolate cherry inside. I had one at a little cafe in Paris this summer, came home and spent about two weeks recreating it. Mission accomplished- they’re so so good.
Favorite kitchen gadget: I honestly could not live without my cuisinart. It’s my baby.
Favorite thing to do in my spare time: bake. Bake. Bake. Bake. Cook. Bake. Bake. Eat. Cook. Bake. But really, I love to make good food and share it with the people I love.

Oooo my all time favorite (and now will NO DOUBT happen tomorrow) is my oat waffles. I make them with eggs and whatever plant milk I have on hand plus coconut sugar and loads… ok loads to some… of cardamom, that way they taste exactly like the typical Norwegian heart waffles I grew up on. Makes me nostalgic eating these delicious things and I always miss our old summer house in the south of Norway. I’m still puzzled how I manage to make them without a single ingredient from the “traditional” not-so-healthy recipe and they still come out tasting just like they are supposed to! Huzzah!!
Hmm in my spare time (little of that!) I go by the community garden and just do “nothing”… I need more “nothing” in my life! Drawing and painting always gets me in a good mood after long days at school/work, and I especially love going to the botanical garden for inspiration or a nice afternoon with friends.
New/old kitchen ingredient/experiment is a super-ancient water kefir batch I got from a lovely new friend! It’s soooo happy and bubbling away on top of my fridge. Right now a ginger ale batch is brewing! Yum :)

Happy blogiversary! I have a handful of half hearted attempts at blogging out in the interwebs. It was just not something that I could stick with, so making it three years is a major accomplishment in my eyes!

My favorite breakfast would either be steel cut oats or homemade waffles. Oats during the busy weekday mornings and waffles for lazy Sunday mornings.

Your recipes are so lovely it hurts me sometimes. And, as creepy as this next sentence is going to sound, I’m throwing it out there anyway. I modeled my living room after yours after seeing it on an instagram post… That colorful rug makes me want to get lost in the jungle with nothing but my books and a spatula (I’d find an abandoned kitchen or something, don’t worry).
My favorite breakfast is a bowl of coffee and a bowl of almond milk and cinnamon oatmeal topped with bananas and peanut butter and coconut.
    Happy blogiversary!

Took 29 years but I am now ready to consider my body as a temple and put only good food in it ;) So, cooking healthy treats and meals is what I’ve been doing in my free time lately.

    Favorite breakfast –>

so often it’s hard to choose between savory and sweet so just about every morning I choose both. For savory I go with my favorite GF – egg free- Oat bread (baked in Colorado Springs) topped with avocado slices sprinkled with red pepper flakes and pink Himalayan salt. For sweet I love overnight oats with chia seeds, coconut – almond milk, and seasonal fruit – figs are of course preferred! yum! All taste buds are satisfied.

I can’t wait to try your doughnuts, but I really do need a round pan! I have a twist type pan, but the doughnuts I’ve made in it just haven’t turned out well….maybe that’s because they were gluten-free. I don’t discriminate against donuts made with gluten though! There are very few donuts that I’ve met that I haven’t enjoyed thoroughly. I did just receive a gluten-free donut cookbook from a friend for my birthday, so that’s what I’ve been experimenting with lately. My favorite breakfast would have to be oatmeal with almondmilk, banana, PB, and LOTS of cinnamon! Easy and delicious. Thanks for the great recipes :)

    Ooh, this looks awesome!

I have two favourite breakfast meals: first is pancakes (either the american or francaise version) which I love especially in summer when I can accompany them with fresh strawberries and other kind of berries just picked up from the patch back in the garden. My second breakfast love is fresh sourdough bread from local bakery that is so soft that it can be barely sliced, served with a thick layer of farmer’s butter my dad brings home and preferably with a good ham, cheddar cheese and/or homegrown tomatoes seasoned with salt and pepper.

And I also totally know what would I love to do with my spare time right now! I would get to cook and bake all the autumn meals I love and still didn’t get a while to make them this year: an apple pie with grandma’s apples, pumpkin soup and also pumpkin pie/cupcakes and a good fall soup with carrot, celery, oats and mushrooms. Yumm!

I have a newfound love for overnight oats! My favorite recipe is one that I adapted myself; I either mash one banana or use one cup of applesauce for the base, 1/2 cup of oats, and 1/3 cup of almond milk. Then I’ll add a dash of cinnamon and a pinch of salt. Sometimes I will add a hint of vanilla or coconut extract, some unsweetened dried coconut flakes, chopped macadamia nuts or hazelnuts. Really, I just go into my pantry and throw in whatever I’m feeling will work. But it is so good and extremely satisfiying! On cold days, I’ll add a 1/4 tsp of baking powder, and bake it for about 30 min. Even better!

I can’t pick one favorite breakfast food because I LOVE breakfast and just about every type of breakfast food is equally wonderful. Oh, then there’s coffee. I guess if coffee counts as a favorite breakfast food it would have a slight edge over anything else.

  • Reply Emily 6 October 2014 at 10:49 AM

I love breakfast. It is my favourite meal and I could eat it happily three times a day. I usually sit down in my sunroom with a warm bowl of cashew buckwheat porridge, topped with bee pollen, peaches and toasted coconut, a dark and bold cup of coffee from the local market here – “Market Square Blend” (St. Catharines, ON). But just the other day I finally bought a new blender (I have been out one 6 months since my boyfriend burnt out the last one), not a Vitamix but the Kitchen Architect, a blessing to change up my morning routine. I made a coconut vanilla espresso shake, pure bliss.
I have this thing with coconut and vanilla, I could add it into every meal. Yet, my Gramma would argue coconut being the worst flavour, would taint something perfectly good prior to its addition. Anyway, this shake: one frozen banana, one cup low-fat coconut milk, 1/4 cup toasted coconut flakes, 1tsp pure vanilla, 2 tbsp ground flax, 1 cup espresso. Blend and sip, refreshing and a perfect blend with this fall weather creeping in.

Anyway, toasted coconut and pure vanilla, they just go hand and hand :)

Thank you for sharing your beautiful blog, I can’t even count how many recipes I have made and plan on making!

1.any sort of breakfast sandwich including avocado, and in my dream world perfectly cooked breakfast potatoes- so basically carbs on carbs with a wee little (or whopping dollop to be more accurate) bit of greens and other goods :)
    2. Because carb products usually always make me happy and avocado is rich without making me feel guilty for over indulging. And combined they keep me full for a reasonable amount of time, and able to drink coffee without jitters :) if I’m being good it’s much simpler tho, multigrain bread with avocado, basil, and a slice or two of tomato- heavenly and guilt free:)

Hi Ashlae, thanks for sharing so much with strangers, you’ve definitely changed the way I bake and think about baking. My all time favorite breakfast food is biscuits. Doughnuts are great. I could eat pancakes and waffles all day…but, biscuits are somethin’ else. Sweet or savory and oh so hard to get just right. A good biscuit, homemade jam and some tea could sustain me (at least emotionally) for the rest of my life. Fingers crossed, all of your tools and ingredients are so inspiring!

  • Reply Natasha 6 October 2014 at 3:06 PM

My favorite breakfast is french press coffee with something carby like a bagel or croissant. Congrats on 3 years of blogging!

  • Reply Alexandra 6 October 2014 at 3:10 PM

These donuts look amazing!! Can’t wait to try them. As for the giveaway, fave breakfast is probably this challah French toast with a blueberry citrus compote that my husband makes. Because A) it’s dessert for breakfast, and B) I get to lay in bed while the cooking is happening. Win-win! And my favorite new kitchen gadget is an ebelskivers pan, which makes the most delicious Danish pancakes. We’ve made some jelly-filled sweet ones, and some jalapeño corn savory ones. There are so many different options. The world is my ebelskiver!

    oh hi, awesome :)
Because of my lack of time in the morning on an avarage weekday, there’s rarely an occasion for me when I can truly indulge while breakfasting. You see, it’s not about preparing something quick, even though top-notch delicious, the previous evening. It’s about the seemingly imperceptible celebration that an assiduously concocted meal provides. There might be a possibility of a slight exaggeration on my part since my mum often laughs at me that I get up at 8am and eat breakfast at almost 12pm. Nevertheless, I’m always complacent about the results. So, as I mentioned, the kind of morning food I’m particularly fond of is this time-consuming and challenging one. Say, why not make three different types of nut butter in one morning only to use a little of each to create 3-layer banana bread? Or what’s wrong with making your own tortillas, then tortilla chips, guacamole, vegan queso and cooking black beans at the same time? Oookay, this even SOUNDS tiring… I guess a simple porridge or two from time to time is not that bad?

  • Reply Valerie 6 October 2014 at 3:22 PM

I just got a mini doughnut pan, I’m looking forward to trying this recipe.
My breakfasts most often have to contain a banana and peanut butter. Either ‘ice cream’ a smoothie or muffins.

  • Reply Jessica 6 October 2014 at 3:26 PM

Hello there! My favorite breakfast is overnight pumpkin oats. I’m going a little crazy on the pumpkin right now, although I can never say no to toast. Just toast in general. I’ll list a favorite baking ingredient too, because it’s on my mind. I don’t think I can get enough of rhubarb right now. I’m planning on making little rhubarb raspberry hand pies tomorrow.

Thank you for your wonderful blog! It’s always beautiful.

Best giveaway! Thank you so much! I wish My favorite breakfast was very fance or healthy… But really, to me the best breakfast is a slice of good, fresh bread with peanut butter and sea salt! And if your not afraid of fat, and extra of coconut oil under the pb is heaven!

I rarely leave comments here but I have always loved the realness, wit, and deliciousness that awaits me on this lovely space you have cultivated over the past couple of years. Obviously you have discovered your groove and you should be damn proud of this amazing and inspiring place you have created.

I’m really trying to think about what my favorite breakfast is because it tends to change season to season but for now I’m digging waffles. Actually my new favorite is your single serving buckwheat waffle that I rediscovered recently. I’ll pile on fruit and whatever nut butter I have on hand and and enjoy it with a cup of whatever tea is striking my fancy at the moment :)

  • Reply Lindsay 6 October 2014 at 3:39 PM

What a fun giveaway. My favorite weekday breakfast food is granola because it fills me up and keeps me going. On the weekend it’s a whole different story. I want it all. A savory egg dish AND something that I can top with maple syrup be it waffles or pancakes and of course something salty alongside – sausage or bacon fit the bill. A new to me kitchen tool that I’m absolutely bonkers over is my spiralizer. Fun Noodles without the guilt – sign me up. Love your blog.

  • Reply Yasmeen S 6 October 2014 at 3:43 PM

My best friend (also an avid baker/kitchen explorer) follows your blog what seems religiously, so I am just extra excited to win this giveaway since I will of course be sharing everything with my other half (that would be my best friend, of course, not my husband hahaha).

My favorite breakfast food is WAFFLES, although currently during this amazing season it’s probably anything pumpkin flavored. I love waffles, because this is what I remember my mom making when I had sleepovers as a kid for the next morning and also if Leslie Knope loves them they must be amazing!

In my free time I enjoy reading, baking, playing with my two kittens, and participating in any seasonal activity (so currently ALL THINGS PUMPKIN, APPLES, FALL)!

First of all can I just say I love your food blog and all the gorgeous photos you take of the yummy food!

Breakfast is my favourite meal of the day (and the best way to start the day)! Being a university student I often keep my breakfasts rather simple and cheap. I can’t go past classic porridge and oats. Often I will add some banana, coconut and cinnamon – but I will basically add anything I can find in the pantry :)

  • Reply Katy Hackworthy 6 October 2014 at 4:09 PM

First of all, I love your blog. Coconut oil pie crust-utterly inspired! Congrats on how far you’ve come ,you deserve it! :)

My favorite breakfast food is a toughie because I LOVE breakfast. I would have to say my favorite is Hogs Pudding, though. It’s a super old family recipe that involves spicy sausage with rice and herbs and cornflakes. We usually have it for Sunday brunch with eggs and fruit with the whole family. It holds so many memories for me, and nothing compares to it.

I am a musician and a literature freak, and I love to create. I am a total nature girl, and enjoy hiking. I feel so at home in the kitchen, and adore all things cooking and baking. Food is a family thing for me, and I love to cook with my dad and make Christmas cookies with my grandmother.

I’m pretty sure I top just about anything with loads and loads of cinnamon. Oatmeal, apples, rice cakes, PB, you name it. It gives everything a warmth and depth that I love.

Now that the autumn has arrived and the mornings are colder and darker, I love nothing more than a big warm bowl of porridge! I vary the toppings but one of my faves now is raspberries or blackberries with chia seeds and honey (if im feeling naughty!). In my free time around lectures and uni work, I love nothing more than getting into a good book whilst having something baking in the oven! I am part of Book Club at uni and everyone always wants me to bring homemade goodies to the meetings, I get requests! Means I can indulge in two of my fave pastimes at once :D

First of all I would just like to say that I love your blog (even though so many people have already said that and it sounds kind of cheesy now, haha but it’s true). So to get to the point, my favourite thing to do in my spare time is hard to say because I love to do a lot of things. One of my favourite things to do is cook or bake. I love trying to make healthy cake or cookie recipes even if they don’t turn great in the end, it’s all about trial and error. I especially love to make things that have cinnamon in it (the smell is amazing, as you probably already know). I also love to look through cook books to find new recipes or ideas to make in the kitchen.

I just love it! And I guess your doughnuts could be a new yummy addition to my breakfast collection! Thanks for your work, all the best!

My favorite breakfast food (meal, I guess) is definitely (homemade!) kimchi with rice (overcooked so the bottom gets all crispy- the word for that in Korean is “nurungji”) and miso soup with lots of seaweed and veggies. Miso soup for breakfast!!! The best forever!

Happy blogiversary! I eat some variety of oats/nuts/fruit almost every morning and never get bored. I bring a jar of dry rolled oats with spices and nuts to work, add hot water and let it sit for a few minutes, and throw it all in a bowl with a chopped apple or anything else in season for a super hearty almost-instant breakfast. My latest weekend breakfast favorite is sturdy toast smeared with avocado and topped with vegan kimchi, which goes oh so well with hot coffee. Now it’s 5 PM and I’m hungry for breakfast :)

I am not vegan but almost 3 months ago I discovered this healthy food blog and instagram profiles because I was searching for something that will improve my relationship with food, so far I am really good and thankful for these food instagrams. Now I eat mostly plant-based but can’t give up cheese, fish and eggs (probably I never will). I really love your recipes and mostly your writing style actually. And now I am trying my luck with this giveaway.

Anyways, my favorite breakfast is warm oatmeal with almond milk and chia seeds and with a side of fruits (pineapple and blueberries or plums and raspberries mostly, I love their color harmony). I love running, I run 5 – 6.5 miles almost everyday. The new tool that I am loving is my spiralizer, that way I started to eat zucchinis again!

I have two favorite breakfast foods. On days I have to wake up hella early and run out the door, I have a waffle-wich with almond butter (Tierra Farm rocks) and (not super sweet) jam. This is easy to throw in my Lunch Skins bag and eat on the train, and is satisfying yet easy on my stomach. On lazy days I have avocado toast with salt, pepper, and hemp seeds, and sometimes other goodies, because it’s the best. And coffee. Always coffee.

I like to start my morning with a bowl of oatmeal. The toppings change with the seasons (currently apple, cinnamon, flax seeds & walnuts) and I’ll occasionally stray to other breakfast offerings like granola or pancakes, but oatmeal has been my jam ever since grade school. Chocolate sometimes makes it in there as #2 breakfast ;)

Daily, I love love love them. I found your blog two years ago and I want to thank you for really helping me be a better vegan baker. I used to bake and cross my fingers hoping my cakes would turn out. But with your recipies I don’t need too because they turn out great every time. Hellohello! What a nice way to celebrate your blog. It’s lovely.
For breakfast I love to get up, make espresso, take the espresso back to bed and then eat it with something that’s called “Doppeldecker” in German. Oh, doubledecker in english is a term, right? Well I’ll stack a bit of wholemilk chocolate on a piece of extremely dark chocolate and when I bite it off my teeth sink through the wholemolk chocolate first, which is kinda fun. And then the whole combination melts in my mouth from the warmth of the espresso+milk-combo. Yummmm! And then I like to either go back to sleep or watch a movie or read a book or snoop around on the internet. Which is just what I’m doing now. And then it’s time for proper breakfast food.
